For folks on low-glycemic diet plans, vegetarians, or anyone who would like to eat healthier, there are a variety of different vegetarian and other healthy crock pot recipes which are delicious and convenient. The beauty of these meals is that you can prepare them in the morning, (or even the night before), throw them into the slow cooker, set it and forget it until lunch or dinner time.

Crock pot recipes are perfect for folks who work during the day, or who have other commitments such as child care or errands to run. In the past, healthy crock pot meals were few and far between as most crock pot recipes included meats high in fat as well as the addition of sugar and salt. Thankfully, slow cooker recipes have come a long way. Healthy slow cooker recipes often include leaner cuts of meat, (or no meat), and a variety of beans and vegetables. Barley, lentils, and dal are also great inclusions to crock pot meals as are a variety of different mushrooms, (especially for vegetarian or vegan dishes).

Coconut milk can be a great substitute for cream or whole milk and a variety of spices can help replace the salt of other crock pot recipes. For households where one or both parents work, these type of meals allow them to prepare healthy, delicious food for their families, with the ease of standard slow cooker recipes.

And for folks who are on low-glycemic or low-carb diets, healthy slow cooker recipes and often much needed break from the low-fat cheese, chicken breasts, and nuts they eat most of the time. Rather than bread, potatoes, or pasta, whole grain rice is often a great accompaniment for a variety of different recipes including Asian inspired dishes such as beef and snow peas. If you do decide to serve pasta with your crock pot meals, opt for whole wheat pasta rather than highly process white pastas.

With summer quickly approaching, healthy crock pot recipes are the perfect way to escape hours hovering around the stove or oven. Just throw in the ingredients of the healthy crock pot meal, turn it on, and go outside to enjoy summer while your dinner cooks itself. Many crock pot recipes even use super convenient food such as canned vegetables and condensed soups, making them even faster to prepare.

Of course, whenever possible, healthy crock pot meals should include fresh vegetables or a salad on the side.

Today's cooks are usually very busy people. They are often parents, work outside the home, chauffer children to various functions, attend sporting events, etc. Yet they want to feed their families good home-cooked meals. One of the easiest way for these busy cooks to prepare delicious family meals, is to use a slow cooker or crockpot. These beef and pork recipes are easy and family perfect. A few minutes of prep, set the cooker, and go on about your day. Walk into your house hours later to the smells of a delicious meal.

APRICOT PORK ROAST

1 (2 1/2 lb) boneless pork loin, trimmed
1 tsp salt
1/2 tsp fresh ground black pepper
1 tsp extra-virgin olive oil*
1 red onion, chopped
1/2 tsp ground ginger
2 to 3 green onions, sliced
1 jar (12-oz) apricot preserves
1 tbsp whole-grain mustard

Sprinkle the roast with the salt and pepper.

Heat the oil in a large nonstick skillet, over medium-high heat, and add the pork. Brown roast, turning frequently to brown all sides; this will take approximately 6 minutes. Transfer the roast to a 5 to 6-quart slow cooker or crockpot.

In the same skillet, cook the red onion and green onion on low heat for a couple of minutes. Sprinkle with the ginger and remove from the heat. Stir the apricot preserves and the mustard into the mixture. Pour mixture over the pork. Cover and cook until pork is fork tender and cooked through, approximately 4 to 5 hours on high or 8 to 10 hours on low.

Transfer pork to cutting board. This makes 8 servings. For less servings, cut off half or whatever needed. Slice the current piece and let the other part cool. When cooled, roast can be wrapped well and frozen for up to two months.

Serve sliced with the cooking sauce.

*If you don't have the olive oil you can use canola oil.

SLOW COOKER POTATO, CARROT, AND ONION POT ROAST

2 tbsp butter
1 tbsp canola oil
1 large onion, cut into wedges
3 lb rump roast
3 carrots peeled and sliced
3 medium russet potatoes, cut into large cubes
2 bay leaves
1/2 tsp salt
1 box dry onion soup mix (both packets)
3 cups boiling water
1 tbsp cornstarch

Melt the butter in the oil in a large skillet. Add the onion wedges and roast. Brown the beef on all sides. Transfer the beef and onion to the slow cooker.

Arrange the potatoes, carrots, and bay leaves around the roast. Sprinkle the salt over all.

In a heatproof bowl, combine the onion soup mix with the boiling water. Stir until smooth. Pour over the meat and vegetables in the slow cooker. Cover cooker and cook on high 3 1/2 to 4 hours.

In a medium saucepan, combine the cornstarch and about 1 teaspoon water; stir to form a paste. Add 2 cups of the hot liquid from the slow cooker and bring to a boil, stirring until the gravy is thickened. Serve the roast with the vegetables and gravy.

Note: Replace the onion soup mix with onion-mushroom soup mix, if desired.

Many people still look at the term "white chili" and wonder what is involved in making it. It really is not a big secret. White chili recipes leave out the tomato, resulting in a white rather than red color. Instead of using red beans, white beans are used, such as great northern white beans, one of the crockpot recipes favorites. The recipes are designed for chicken or turkey and white beans. If your dinner guests include vegetarians, leave out the poultry and replace any meat stock that might be requested with vegetable stock.

This special white chicken chili is made in the crockpot, and is a wonderful recipe to make during the fall and winter, and even in the early spring, when the mornings and evenings are still cool. The chicken is so delicious with the onion, garlic, wine, and bean flavors. You can never have enough warm, satisfying main dish recipes, and this one will become one at the front of your list of favorite crockpot recipes. What is even better is that the most difficult step is still easy. Once the onion, chicken, and garlic are browned in a skilled, everything is combined in the crockpot. There, it will simmer, blend, and combine the flavors of all the ingredients until finished.

Mustard powder is not something most cooks use every day. The seasoning adds a slightly spicy flavor without making the chili too hot. Garlic and onion are more common seasonings, and when combined with the cheese garnish and cilantro, the flavor of Old Mexico comes rushing through. Serve the chili with tortilla chips, either to the side or over the top of them. Soft, warm bread is also a good choice for those who prefer that to crunchy chips.

Special White Chicken Crockpot Chili

What You Need:

3/4 pound boneless skinless chicken breast, cubed 1 teaspoon seasoning salt 1 teaspoon mustard powder 1/8 teaspoon ground black pepper 2 cans great northern beans, drained 1 tablespoon olive oil 1 cup dry white wine 2 cloves garlic, minced 1 onion, minced 1/2 teaspoon salt 4 cups baked tortilla chips 1/2 cup shredded Monterey Jack cheese Handful of cilantro

How To Make It:

Place a skillet over medium high heat; heat oil. Add the cubed chicken, sauteing it until the pink is gone Place the chicken in a glass bowl.

Put the garlic and onion in the skillet and cook until they are soft. Remove the skillet from the burner, add the garlic and onion to the bowl of chicken, and put the chicken, garlic, and onions in the crockpot.

Add the wine, seasoning salt, beans, salt, pepper, and mustard powder. Cook for 5 to 6 hours over a low heat.

Serve over tortilla chips. Add a garnish of cilantro and cheese.

Serves 4
